Easy Chicken and Veggie Bowl

When I'm on the road, I like meals that are easy to make, don't require a bunch of ingredients, and don't leave me with a sink full of dishes. This chicken and veggie bowl is one of those meals.


It's nothing fancy, but it's filling, tastes good, and you can make the whole thing in one skillet. It's also pretty easy to change up depending on what you have available.

What You'll Need


* Chicken breast, cut into small cubes

* 1 bag of mixed vegetables

* Mayonnaise (I prefer healthier avocado mayonnaise)

* Your favorite spices

* A little cooking oil (I prefer healthier avocado oil)


For the spices, I prefer to use some BBQ spice for the chicken and rosemary and garlic mix of herbs for the veg, or I just use whatever I have on hand. Salt, black pepper, garlic powder, onion powder, paprika, or a little Cajun seasoning all work well. You really don't need to be too precise with this.


Making the Chicken and Veggie Bowl


Start by cutting the chicken breast into bite-sized cubes. I try to keep the pieces fairly similar in size so they cook evenly.


Heat a little oil in a skillet over medium-high heat and add the spiced chicken.


Let the chicken cook for about **5–7 minutes**, stirring occasionally, until it's nicely browned on the outside. It doesn't necessarily need to be completely cooked through at this point since it's going back in the skillet with the vegetables.


Once the chicken has some good color on it, add the mixed vegetables.


Add whatever spices you're using and give everything a good stir.


Turn the heat down to around medium and continue cooking for another **5–8 minutes**, stirring occasionally. The exact time will depend on the size of your chicken pieces and whether you're using fresh or frozen vegetables.


If you're using frozen vegetables, you can add them straight from the freezer. They will release some moisture as they cook, which is fine.


The chicken is done when the thickest pieces reach **165°F** internally.


Once the chicken is cooked through and the vegetables are tender, remove the skillet from the heat.


Now add the mayonnaise.


I usually start with a couple of spoonfuls and mix everything together. Add more if you want it creamier. The heat from the chicken and vegetables will help the mayonnaise coat everything and turn it into a simple creamy sauce.


And that's really all there is to it.

A Good Road-Trip Meal


This is one of those meals that works particularly well for camping or traveling because you don't need much to make it.


Chicken, a bag of vegetables, some spices and mayonnaise. That's about it.



I also like that it's easy to scale up. If you're cooking for two or three people, just add more chicken and vegetables and adjust the mayonnaise and seasoning as needed.


It's not a complicated recipe, and that's kind of the point. When I'm out exploring, I'd rather spend my time outside than spend an hour cooking.


**Simple, filling and made in one skillet. That's a pretty good combination for a meal on the road.**
